Not sure what to make for dinner? Use this trick

Hi there,

If you’re anything like me, you probably start your day with the same question: What the heck am I going to make for dinner? For those of us who aren’t organized meal planners, raises hand, that daily question can lead to a lot of extra grocery store runs and takeout orders.

But last year, I unlocked a major cheat code:I started grocery shopping in my own freezer. All it took was one good freezer purge, and I realized that I did, in fact, have food at home. A bag of Trader Joe’s potstickers… a bag of vegetable fried rice… a package of frozen shrimp… a baggie of sliced scallions… Sounds like a quick and easy dinner to me!

Once I got my hands on a set ofAnytime Freezer Trays, my freezer stash got a major upgrade. Here’s how:

  • I make big batches ofbone broth riceand freeze it in 1/2 cup portions for when I don’t want to wait 20+ minutes to cook it from scratch.
  • Anytime I buy a rotisserie chicken, I shred all the meat and use the carcass to make a batch ofquick chicken stock. Then I freeze it in 1/2 cup portions for whenever a recipe calls for it.
  • I pop leftover tomato paste into the 2-tablespoon trays —\xa0because recipes never call for a full can and I hate to see anything go to waste.
  • Whenever I have a bag of leafy greens about to go bad, I blend up a batch ofgreen smoothie cubesfor quick breakfasts.
  • I’ve also gotten into the habit ofpre-chopping mirepoixand freezing it into 1/2 cup trays for future nights when I don’t have the energy for any prep.

These days, I ask myselfwhat can I cook using only what I already have at home? And trust me, once you start treating your freezer like a pantry, the possibilities are endless.

What do you cook when you don’t feel like grocery shopping? We want to hear!

Lauren
