MyLoaded Baked Potato Pizzarecipe takes a stand, and that stand is this: carbs are even better when paired with other carbs. This is a philosophy I apply to a lot of my meals: I shower pastas generously (recklessly!) with breadcrumbs; I stuff tortillas with starchy veg such as squash. But potatoes and bread are an especially glorious carb-on-carb experience. It comes down to the texture. As you can see in thisYouTube video, the crust of this pizza is golden and crisp on the bottom but otherwise soft and fluffy; the potatoes are tender and creamy, but with the occasional crispy edge. That combination — soft on soft, with moments of potato chip-like crunch — makes this pizza hard to stop eating. |

Of course, there's a lot of flavor, too. I packed this pizza with rosemary, onions, chili flakes, sharp cheddar cheese, chewy bites of bacon, and a final flourish of sour cream and chives.
